Here's a quick and tasty recipe I'd suggest: Spinach Soup:

3 tablespoons fat (olive oil or similar)
700 ml vegetable stock
1. Wash and peel the onion, garlic, carrot, and potato. Put them in a food chopper together with the spinach and chop everything very finely.
2. Bring the stock to the boil in a medium-sized pot. Add the vegetables to cook, along with the fat and salt. Let it simmer until the vegetables are completely soft, about 20 minutes.
3. Ladle out a teacup's worth of the soup and let it cool completely. In a small bowl, beat the egg yolk and slowly mix it with the cooled soup, stirring the whole time as you temper it. Pour the tempered mixture back into the main pot of soup, adding it slowly and stirring vigorously. Let the soup simmer for a further 3-5 minutes.
